At Hyatt Regency Bali and Andaz Bali, by Hyatt, food and beverage operations are being led by two hospitality professionals with decades of international experience across Hyatt properties in Asia. Ivan Gutierrez takes on the role of Cluster Director of Food & Beverage, while Chef Vincenzo Gatti joins as Cluster Executive Chef, bringing complementary expertise to the two Sanur resorts.
While Ivan will oversee the overall food and beverage strategy, operations and service culture, Chef Vincenzo will lead the culinary vision across both properties. Their appointments strengthen the resorts’ focus on culinary excellence, service innovation and memorable guest experiences.
Ivan Gutierrez Puts People at the Centre of Hospitality
Ivan joins Hyatt Regency Bali and Andaz Bali from Grand Hyatt Erawan Bangkok, where he most recently served as Director of Food & Beverage. His Hyatt career has taken him to several destinations across Asia, including Park Hyatt Tokyo, Grand Hyatt Tokyo and Hyatt Regency Qingdao, as well as properties in Beijing and Koh Samui.
Across these roles, Ivan has led diverse dining concepts while working to strengthen service standards and guest engagement. For him, hospitality is first and foremost about people. He believes meaningful hospitality begins with genuine human connection, whether through connecting with guests across the resorts’ restaurants and bars or supporting colleagues behind the scenes.
His leadership philosophy centres on fostering a collaborative team culture and empowering colleagues, with the aim of creating experiences that leave a lasting impression on guests.
As he begins his journey in Bali, Ivan will work closely with the teams at Hyatt Regency Bali and Andaz Bali to further develop the resorts’ food and beverage offerings while continuing to inspire a culture of service excellence.
Chef Vincenzo Gatti Leads the Culinary Direction
Chef Vincenzo Gatti brings more than two decades of culinary experience to his new role, including ten years with Hyatt. His Hyatt journey began as Chef de Cuisine at Park Hyatt Guangzhou, followed by leadership positions as Executive Sous Chef at Grand Hyatt Seoul and Executive Chef at Hyatt Regency Hua Hin.
Most recently, he served as Executive Chef at Andaz Pattaya Jomtien Beach, where he led La Cucina Italian Restaurant and Fish Club Seafood Restaurant. When the Michelin Guide was first introduced to Pattaya in 2025, the two restaurants became the city’s only Western and hotel restaurants to receive the recognition, according to the release.
Chef Vincenzo is known for his collaborative leadership style and is passionate about developing talent, encouraging creativity and crafting memorable dining experiences rooted in quality ingredients and thoughtful execution.

In his new role, Chef Vincenzo will lead the culinary vision across Hyatt Regency Bali and Andaz Bali, working with the teams at both resorts as they continue to evolve their food and beverage offerings.

Together, Ivan and Chef Vincenzo bring complementary expertise to the two resorts. Ivan’s responsibilities cover the wider food and beverage strategy, operations and service culture, while Chef Vincenzo oversees the culinary direction.
