Sari Delicatessen and Cafe, part of Sari Pacific Jakarta, Autograph Collection, has introduced a new menu centered on Indonesian home cooking, drawing from regional recipes, familiar spices and dishes traditionally served at family tables.
According to Chef Oki, the menu is based on family recipes and the flavors associated with home cooking, particularly dishes inspired by a mother’s cooking. Traditional Indonesian spices are slowly cooked to develop richer, balanced flavors, while contemporary techniques are used to refine the dishes without changing their original character.
Among the highlights is Prawn Lumpia, featuring crisp pastry filled with prawns, bamboo shoots and bean sprouts, served with peanut sauce. Ayam Bakar Bumbu Rempah pairs grilled chicken marinated in Indonesian spices with sambal matah and fresh crudités, while Bebek Goreng Bumbu Rempah is slow-cooked until tender and served with bumbu hitam, sambal terasi and urap.
The menu also draws from regional Indonesian cooking through Beef Garo Rica, inspired by the flavors of North Sulawesi. The dish features tender sirloin with rice, a poached egg, sambal garo rica and fresh crudités.
For dessert, Cendol Panna Cotta reinterprets the familiar Indonesian dessert as a contemporary creation, combining brown sugar, coconut cream, vanilla ice cream and jackfruit.
The new menu extends beyond these signature dishes with a broader selection inspired by Indonesian culinary traditions, bringing familiar recipes and flavors into a more contemporary dining setting at Sari Delicatessen and Cafe.
