Byrd House Bali will celebrate Indonesia’s Independence Day with a special Nusantara Degustation Dinner, an exclusive dining experience that explores the country’s culinary heritage through a contemporary coastal dining concept in Sanur.

Taking place on 16 August 2026 from 7 PM to 10 PM, the one-night dinner presents a curated degustation menu that highlights the diversity of Indonesian flavours while introducing modern interpretations of familiar dishes. Set against Byrd House’s coastal surroundings, the experience brings together traditional ingredients, regional recipes, and refined culinary techniques.

The menu unfolds through a series of courses inspired by Indonesia’s rich gastronomic landscape. The evening begins with fresh oyster and sea urchin paired with kemangi, introducing guests to a combination of coastal ingredients and local flavours.

The selection of starters continues with contemporary interpretations of Indonesian classics, including rujak-style torched mackerel, crispy crab spring rolls, Balinese seaweed salad, rendang sapi, opor bebek, udang balado, and sayur urap. Each dish presents familiar Nusantara flavours through a more refined presentation while maintaining its connection to traditional recipes.

The dining journey continues with Soto Sari Laut, a seafood soup featuring aromatic spices and coconut, before moving into the main courses of nasi kuning, sate kambing served with traditional peanut sauce, and pan-seared kerapu accompanied by sambal kecombrang.

The experience concludes with an assortment of jajan pasar-inspired desserts, featuring lapis Surabaya, onde-onde, pia kacang, putri mandi, and klepon. The selection offers a contemporary take on traditional Indonesian sweets, bringing the evening to a nostalgic yet elevated finale.
