Artesian Bar Jakarta introduced Slow Roots, a cocktail program shaped by Indonesian soil, seasonal rhythm, and respect for craftsmanship. Built on the idea that “what grows together, pours together,” the collection features sixteen drinks that trace the cycle of growth through four chapters: Soil, Sprout, Bloom, and Harvest.
Each chapter draws from the land itself. Soil offers grounding flavors with cassava, purple yam, temulawak, and beetroot. Sprout highlights freshness through moringa, pandan, lemongrass, and andaliman. Bloom brings delicate floral notes of nutmeg flower, jasmine, frangipani, and tea. Harvest celebrates tropical richness with coconut, banana, durian, and jackfruit. Alongside these, the bar team experiments with inventive elements—pandan and parmesan cream, satay sauce distillate, banana skin shrub, and MSG‑infused cacao—crafted to challenge convention while keeping balance. The menu also reimagines Indonesian classics. Drinks like the Tempe Martini, Pie Susu Old Fashioned, Pala Negroni, and Kecombrang Margarita connect tradition with modern mixology.
Visual storytelling accompanies the collection through the work of artist Erianto, whose illustrations capture the spirit of the cocktails—playful yet contemplative, nostalgic yet contemporary. His art reflects the philosophy behind the drinks: flavor, like creativity, grows from shared roots.
Sustainability is central to the program. Menus are printed on organic paper, and coasters are made from repurposed coffee waste in partnership with Liberty Society, supporting women artisans across Indonesia. Ingredients are sourced from local farms such as Yum Organic in Cipanas, which began as part of a community orphanage project, and Kebun Mama Organic in Puncak, a family garden that grew into a thriving farm. Artesian also maintains its own rooftop botanical garden, harvesting moringa, pandan, and lemongrass directly above the city skyline.
