Seasalt at Alila Seminyak will continue its collaborative dining series with Seasalt & Friends Chapter 11, bringing together the beachfront restaurant and Bali dining concept WAATU for a one-night culinary programme on 23 May 2026. The event highlights ingredient-led cooking, open-flame techniques, and modern coastal dining through a menu created by Chef Lachland Budd of WAATU and Chef Hazwan Hamdan of Alila Seminyak.
Set along Seminyak’s coastline, the collaboration combines Seasalt’s seafood-driven approach with WAATU’s globally influenced cooking style, which focuses heavily on cooking over coals and highlighting Indonesian ingredients through contemporary techniques.
A Four-Course Menu Built Around Flame and Coastal Flavours
The evening is presented through a four-course set menu alongside additional à la carte dishes, allowing guests to experience the collaboration through multiple formats.
The menu begins with Beef Tartare, enhanced with kimchi salt that adds a subtle fermented depth to the dish, followed by Tuna Usuzukuri paired with bonito cream, radish, and sake for a lighter and more delicate flavour profile.
For the main course, the chefs present BBQ Mahi Mahi served with leeks, sake glaze, and wakame, combining smokiness from the grill with coastal and umami-driven flavours. Dessert concludes with Bali Cocoa, featuring coconut and salted milk caramel, highlighting locally sourced ingredients through a richer but balanced finish.
Alongside the tasting menu, the à la carte selection expands on the collaboration with additional dishes that reflect the cooking styles of both kitchens.
A Collaboration Rooted in Open-Fire Cooking
WAATU, led by Executive Chef Lachland Budd, is known for its focus on cooking over coals and wood fire, with dishes shaped by Indonesian ingredients and open-flame techniques. The restaurant’s approach ranges from yakitori-style skewers to woodfired flatbreads and grilled seafood.
The collaboration with Seasalt continues the restaurant’s broader Seasalt & Friends series, which invites chefs and dining concepts to create one-off menus centred on technique, ingredient sourcing, and culinary exchange.
Held within Seasalt’s open-air beachfront setting, the event is designed around a relaxed but structured dining atmosphere that reflects Seminyak’s coastal dining culture.
The Sunset Hour and Dinner experience will take place from 5 PM to 10 PM, with the four-course menu priced at IDR 800,000++ per person. Additional à la carte dishes will also be available during the event.
