COPA at 25hours Hotel Jakarta will welcome KAUM Bali for a three-day culinary collaboration from 7 to 9 August 2026, bringing together Indonesian heritage recipes and contemporary open-fire cooking. The collaboration includes dinner services on 7 and 8 August, followed by a National Day Brunch on 9 August.

The special menu pairs Chef Matias Mardones of COPA with Chef Maxie Millian of KAUM Bali, combining their shared appreciation for ingredient-driven cooking while drawing from different culinary traditions. Together, they reinterpret regional Indonesian flavours using charcoal grilling, wood-fire cooking, fermentation, and modern techniques.

At COPA, Chef Matias brings a Latin American approach to live-fire cooking shaped by his experience in Chile, Hong Kong, Manila, Macau, South Korea, and Indonesia. Joining him is Chef Maxie, who leads the kitchen at KAUM Bali after working at restaurants including Teatro Gastroteque, Sangsaka, Merah Putih, Aperitif, and Locavore NXT.

Part of the Potato Head family, KAUM has become known for documenting regional recipes, indigenous ingredients, and traditional cooking methods from communities across the Indonesian archipelago. For this collaboration, those influences are brought together with COPA’s open-fire cooking philosophy to create a menu that honours Indonesian culinary traditions while presenting them through a contemporary perspective.

The collaboration also extends to Oddbird Bar, where KAUM Bali’s mixologist will present a guest cocktail takeover featuring drinks inspired by Indonesian ingredients and regional flavours.

“Food becomes more interesting when different perspectives come together,” said Chef Matias Mardones. “KAUM has spent years preserving Indonesia’s culinary stories, while at COPA we naturally cook over fire and celebrate sharing. Bringing those ideas together felt like the right conversation to have.”

The collaboration will take place at COPA and Oddbird Bar at 25hours Hotel Jakarta, with dinner available from 6 p.m. to 10 p.m. on 7 and 8 August, followed by the National Day Brunch from 12 p.m. to 3 p.m. on 9 August.
