The Ritz-Carlton Jakarta, Pacific Place will collaborate with Indonesian culinary expert William Wongso for The Archipelago Table, a two-day dining experience taking place on 1 and 2 August 2026 at PA.SO.LA Restaurant. Created alongside Executive Chef Willmer Colmenares and the hotel’s culinary team, the special menu highlights recipes and regional flavours inspired by Wongso’s decades of culinary exploration across the Indonesian archipelago.

The menu features a selection of dishes that reflect Indonesia’s diverse food traditions, including Rendang Beef Cheek, Garang Asam Salmon, and Tuna Gohu in Pani Puri. The latter reinterprets Gohu Ikan, a traditional North Maluku dish often compared to ceviche, by serving the seasoned tuna in crisp pani puri shells. The contemporary presentation combines Indonesian flavours with influences from South Asia while preserving the character of the original recipe.

Each dish draws inspiration from places, people, and recipes Wongso encountered during his travels throughout Indonesia. Over several decades, he has documented regional cuisines, traditional cooking techniques, and local ingredients, helping introduce Indonesian gastronomy to wider audiences through his research, publications, and television appearances.

“If you want to understand a culture, begin with its food,” said William Wongso. “Every region has its own character, wisdom, and culinary identity. Indonesia’s greatest strength lies in its diversity, and I hope guests leave The Archipelago Table with not only memorable flavours, but also a deeper curiosity about the stories and traditions that bring those flavours to life.”

Beyond the dining experience, guests will also have the opportunity to meet Wongso and hear the stories behind the dishes, offering additional insight into Indonesia’s culinary heritage and the inspirations behind the menu.

A portion of the event’s proceeds will support fundraising efforts for the Marriott Business Council Indonesia Charity Classic Golf Tournament, which raises funds for the development of clean water facilities in East Nusa Tenggara.

The Archipelago Table by William Wongso will be available for two days only at PA.SO.LA Restaurant, The Ritz-Carlton Jakarta, Pacific Place, with reservations recommended due to limited seating.
