Australian-Spanish restaurant MoVida and Bali-based restaurant Santanera will come together for a collaborative dining series during Ubud Food Festival 2026, reuniting chefs Frank Camorra and Andres Becerra through a shared culinary history shaped in Melbourne. The collaboration will take place at Santanera in Canggu on 28 May 2026, followed by a second dinner at Four Seasons Resort Bali at Sayan on 30 May 2026.
The event marks a reunion between Camorra, founder of MoVida, and Becerra, who spent more than a decade working under his mentorship in Melbourne before later leading Santanera in Bali. The collaboration forms part of Ubud Food Festival 2026’s headline dining events, bringing together Spanish cooking techniques, Latin American influences, and locally sourced Balinese ingredients through a shared-menu format.
Now heading Santanera, Becerra’s cooking combines Latin American flavours with European techniques and tropical produce from Bali. “What I learned in Melbourne wasn’t just how to cook, it was discipline, consistency, and respect for the craft. Great food depends on systems, on people, on showing up every day. That’s what we’ve built at Santanera,” he said.
Camorra, known for introducing Spanish tapas-style dining to Australia through MoVida, described the collaboration as part of a broader mentoring relationship that has evolved over time. “You want people to take what they’ve learned and turn it into something of their own. Seeing Andres build a restaurant with its own identity, that’s the goal. That’s the most rewarding part,” he said.
A Menu Built Around Shared Influences
The collaboration menu reflects both chefs’ culinary backgrounds, balancing Spanish techniques with Latin American flavours and woodfire cooking. According to the organisers, the dishes are designed around progression and memory, combining tropical ingredients with precise cooking methods and shared dining formats.
At Santanera, the dinner will be presented as a sharing set menu priced at IDR 1,100,000++ per person, beginning from 6 PM onwards.
A second edition of the collaboration will take place at Four Seasons Resort Bali at Sayan on 30 May 2026, with two seatings available between 6 PM–8 PM and 8.30 PM–10 PM. The Ubud dinner is priced at IDR 1,650,000++ per person.
Two Restaurants, One Shared Culinary Story
Founded more than two decades ago in Melbourne, MoVida became known for popularising tapas and shared-style Spanish dining in Australia, while Santanera has established itself in Bali through a menu shaped by Latin American flavours, local ingredients, and collaborative dining formats.
Set within Bali’s evolving dining landscape, the collaboration reflects a growing exchange between international culinary influences and locally rooted ingredients, bringing together two chefs connected through mentorship, technique, and shared dining culture.
