At Kilo Jakarta, the latest chapter in its bar program is not about drinks standing alone, but about how they meet the food on the table. Through Bar Shakeover Vol. 8, the restaurant introduced a new set of cocktails designed with the kitchen in mind, each one created to echo, contrast, or lift the flavors of a dish.
The collaboration brought together Ghalim Pati, Head Mixologist of SwillFam, and Kilo Jakarta’s Head Bar, Fey Natasya Djamal. Together they shaped a tasting experience that treated cocktails less like separate indulgences and more like companions to the meal. The approach is closer to how wine is often paired with food, but here the language is spirits, bitters, and botanicals.
The lineup moves across styles and moods. A drink like Moskva River blends vodka and rum with pineapple, mint, and ginger bitters, offering freshness with a layered edge. Negroni Blossom takes the familiar structure of a Negroni and softens it with honey citron and pineapple. For those drawn to richer notes, Soufflé Choco Martini folds chocolate vodka, espresso, and aquafaba into a silky glass, while John, Wake Up! leans into bourbon, brandy, coffee, and cream with spices and zest.
Other creations play with unexpected accents. Earl Grey Societea brings together smoky islay whisky, rye, elderflower, and tea, while Black Mamba uses roasted pineapple tequila and charcoal for a darker profile. Marigold Spritz lightens the mood with gin and marigold sauvignon blanc, and Red Whisper layers Irish whiskey with strawberry and pandan. The Smoked Olive Margarita introduces a savory twist with cold-smoked olive, and Botanical Sour blends mezcal and gin with fenugreek and osmanthus for a floral, earthy balance.
What ties the collection together is the idea of cocktails as part of the dining rhythm. Each glass is built not only for taste but for dialogue with the food, showing how a bar program can move beyond stand-alone recipes into something more integrated with the kitchen’s voice.
