Mandapa, a Ritz-Carlton Reserve in Bali, will present a two-week culinary residency at Zadún Los Cabos, a Ritz-Carlton Reserve, from 8 to 22 May 2026, marking the first cross-property culinary takeover within the Ritz-Carlton Reserve portfolio.

The programme centres on Mandapa’s zero-waste culinary philosophy, a concept rooted in sustainability, local sourcing, and the use of whole ingredients. During the residency, guests will be introduced to a series of food-led experiences including curated tastings, interactive demonstrations, and hands-on cooking classes, all reflecting the restaurant’s approach to ingredient-driven cooking.

A Bali-Inspired Menu Led by Chef Eka Sunarya

At the centre of the collaboration is Chef Eka Sunarya, Executive Sous Chef of Mandapa, who will present a menu shaped by his approach to Balinese and contemporary cuisine. His dishes are built around foraged ingredients sourced within a 100-kilometre radius, alongside modern techniques such as sous-vide, reflecting a balance between traditional sourcing and contemporary execution.

Chef Eka, who leads the culinary programme at Kubu, Mandapa’s bamboo-set restaurant, draws from a background rooted in Ubud and its surrounding communities. His cooking focuses on working closely with local farmers and producers, with an emphasis on reducing waste while maintaining flavour and technique.

“This residency is our chance to share my personal culinary creations with guests,” said Chef Eka. “Through each dish, we hope to create connections, spark curiosity, and celebrate how food can bring people together.” 

Expanding a Food-Led Programme in Los Cabos

The collaboration builds on Zadún Los Cabos’ existing culinary programme, which includes fire-driven concepts such as HUMO and a range of workshops from wine-making to cacao tastings. The addition of Mandapa introduces a different perspective, focusing on Southeast Asian ingredients, sustainability, and narrative-driven dining.

According to Wadim Alvarez, General Manager of Zadún Los Cabos, the collaboration reflects a shared approach between the two properties. “This collaboration reflects our shared philosophy that travel should inspire deeper worldly understanding, and we are honored to host an experience that allows guests to engage with Mandapa’s culinary artistry in such an intimate and meaningful setting.”

A Cross-Regional Culinary Exchange

Positioned as a limited-time programme, the residency connects Bali and Baja California through a shared focus on place-driven cuisine, where ingredients, techniques, and storytelling are central to the dining experience. The takeover also highlights Mandapa’s position within the global dining landscape, as one of Bali’s recognised culinary destinations.
