Sora, the rooftop bar at Rosewood Phnom Penh, has introduced a new cocktail menu titled Build & Sip, presenting a collection of drinks inspired by the idea of construction and creative assembly. The menu draws parallels between building structures and crafting cocktails, inviting guests to explore drinks layered with flavour, technique and visual detail.

Developed by Jonas Vittur, Director of Bars at Rosewood Phnom Penh, together with the Sora team, the concept reinterprets familiar cocktail structures through the bar’s signature approach—combining Japanese aesthetics, Cambodian ingredients and global cocktail traditions.

“With ‘Build & Sip’, we wanted to explore the idea that cocktails can be constructed much like architecture, where each element contributes to the final experience,” says Jonas Vittur, Director of Bars at Rosewood Phnom Penh. “The menu draws inspiration from the joy of building and the memories many of us associate with it, while highlighting the precision and creativity behind modern bartending. Each drink begins with a classic structure and is layered with Japanese influences, Cambodian ingredients and personal stories from our team.”

A Menu Built Layer by Layer

The Build & Sip menu includes 16 drinks in total, comprising 14 alcoholic cocktails and two zero-proof options. Each drink begins with the structure of a classic cocktail before being reworked through Sora’s interpretation of flavour, technique and presentation.

Reflecting the construction-inspired theme, the drinks feature playful design elements such as studded ice blocks, architectural glassware and edible garnishes referencing brick structures. These visual details add character while maintaining the bar’s refined aesthetic.

The menu also highlights locally sourced ingredients and regional produce, reflecting Cambodia’s agricultural heritage and aligning with the bar’s broader approach to thoughtful ingredient sourcing.

Cocktail Highlights

Among the menu’s highlights is Khmer Colada, a tropical drink combining white rum, pineapple and coconut with Cambodian curry spices, sansho pepper and a touch of chilli, creating a layered balance of sweetness and spice.

Another drink, Cherry Lady Punch, takes the form of a clarified milk punch. The cocktail blends cashew nut whiskey, spiced rum, ratafia rossa, almond liqueur, Cointreau, cherry syrup and sakura tea, finished with a dark chocolate garnish infused with cashew and pepper notes.

The Nihon Gimlet draws from Japanese tea traditions and is served in a ceramic tea cup inspired by traditional tea rituals. The drink combines Japanese gin, matcha green tea and kaffir lime leaf, resulting in a bright and aromatic cocktail with herbal and citrus notes.

Growing Recognition for Sora

The launch of the new menu comes as Sora continues to gain international recognition. In 2025, the bar was ranked No. 65 on the Asia’s 50 Best Bars 51–100 list, becoming the first bar in Cambodia to appear on the regional ranking.

In the same year, Sora also received the Ketel One Sustainable Bar Award at Asia’s 50 Best Bars, recognising the team’s commitment to responsible sourcing and sustainable bar practices.
