Uluwatu has no shortage of bars, but most follow a familiar rhythm: music turned up, menu sprawling, and energy spilling well past midnight. Then there’s NOTTE, a new spot that takes the opposite approach. Here, the night slows down.
The name means “night” in Italian, and that’s exactly how the place feels-still, calm, and quietly comforting. The lighting is low, the furniture understated, and the soundtrack leans toward jazz and blues instead of bass-heavy beats. Stepping inside, it immediately felt the contrast; it’s more like slipping into a pocket of time than walking into another bar.
Behind the bar is Head Bartender Taketo Utsunomiya, who brings a deliberate precision to each drink. Guests are encouraged to skip the menu altogether and simply share how they’re feeling or what flavors they like. From there, Taketo builds a cocktail one at a time-measured, explained, and poured without theatrics. “The idea was to create a bar that feels like a gentle light at night,” he says. “Somewhere people can come to take it easy after a long day in the sun.”
The approach is inspired by slow coffee bars, where patience and attention are part of the ritual. At NOTTE, that translates into cocktail that feel less like a transaction and more like a conversation. Even when ordering something as classic as Negroni, the moment stretches; the quietness of the space makes you notice the details-the ice clinking, the faint citrus oil misting across the glass.
It isn’t the kind of place that competes with Bali’s bigger nightlife venues. There are no DJs, no crowded events, and no rush to turn over tables. Instead, it has quickly found a following among locals, travelers, and industry friends looking for something more grounded. “It’s not just about what’s in the glass, but the feeling around it,” says Taketo.
Sitting there with a drink in hand, you can feel it. The bar doesn’t demand your attention; it gives you room to linger, talk, or simply take a breath. After the sun-soaked chaos of Uluwatu’s cliffs, it feels like the kind of place you didn’t realize you needed until you find yourself staying longer than planned.
NOTTE may eventually host collaborations or guest shift, but for now, the team is focused on refining its atmosphere and keeping the pace steady. In a part of Bali known for big nights out, it’s a reminder that sometimes the best evenings are the quiet ones.
