Waldorf Astoria Kuala Lumpur has unveiled its culinary direction ahead of its opening, introducing a series of dining concepts led by Chef Garima Arora and Chef Jean-Georges Vongerichten, positioning the hotel as a new dining destination in the city.

The upcoming hotel will house multiple restaurants, each shaped by the chefs’ individual approaches to cuisine, from modern Indian cooking to globally influenced, ingredient-driven menus.

A Modern Indian Concept by Garima Arora

Chef Garima Arora will lead Yaari, a modern Indian restaurant built around regional diversity and traditional techniques. The menu draws from across India, reinterpreting dishes such as Southern coastal curries and Northern-style kebabs through a contemporary lens.

A key focus of Yaari is its approach to chaat, transforming the well-known street food into more refined compositions that emphasise texture, spice, and balance. The dessert selection follows a similar direction, with sweets inspired by traditional mithai, presented with updated techniques and more precise execution.

“Yaari will celebrate the extraordinary diversity of Indian cuisine in ways that feel both authentic and contemporary,” said Chef Garima Arora. “Yaari is born from my passion for storytelling through food, celebrating heritage, creativity and the joyful experience of sharing a meal. Three Concepts by Jean-Georges Vongerichten

Chef Jean-Georges Vongerichten will introduce three distinct dining venues: JG KL, abc kitchens KL, and The Bar by JG, each reflecting different aspects of his culinary style.

JG KL will present a menu shaped by French, American, and Asian influences, with dishes built around seasonality and contrast, balancing bold flavours with a more restrained, precise execution.

abc kitchens KL brings together several of his established concepts into one space, combining farm-to-table cooking, plant-forward dishes, and Latin-inspired flavours. The menu is designed to be seasonal and produce-driven, offering a more relaxed format compared to the hotel’s other dining venues.

Completing the line-up, The Bar by JG focuses on smaller plates and shareable dishes, designed to pair with a curated beverage programme, while maintaining the same balance of flavour and technique found across his restaurants.

Additional dining venues are expected to be announced closer to the hotel’s debut, further expanding its role as a multi-concept culinary destination in Kuala Lumpur.
