Prepare to embark on an intimate gastronomic journey. The renowned Chef Kimura Izumi of SushiJin, who hails from the picturesque Toyama, Japan, will be joining Wabi-Sabi restaurant for an exclusive two nights affair. Don’t miss this rare opportunity to taste his exquisite sushi from 13th to 14th October. Set in an intimate private room, the culinary extravaganza commences at 5:00 PM onwards, welcoming a select group of connoisseurs, limited to just 56 discerning guests. Priced at IDR 4,500K++ per person, this experience is masterfully paired with a quartet of prestigious Dassai sake selections.

Chef Kimura Izumi’s culinary journey is a tale of passion and self-discovery. Born in Tokyo in 1968 and raised in the enchanting Toyama Prefecture, his destiny was shaped when he dined at the illustrious Ginza Kyubey at the age of 29. Enchanted by the flavors that danced on his palate, he resolved to become a sushi chef. Eschewing traditional apprenticeships, Kimura embarked on a relentless quest for knowledge, delving into the origins and history of sushi. After years of perseverance, he realized his dream by opening SushiJin in April 2005, nestled in the heart of his hometown.

SushiJin is situated in Toyama, a coastal city blessed by the bounties of Toyama Bay, offering over 500 varieties of seafood year-round. The city’s commitment to environmental sustainability has earned it the designation of an environmental model city. Chef Kimura’s dedication to his hometown shines through in every dish, showcasing the region’s finest catches, from Yamayuki tuna to the sardines bursting with rich flavors. The rice is grown at the foot of the Tateyama mountain range. The salt, crafted by Suzu Seien Salt Making at the tip of the Noto Peninsula, bears testament to his unwavering commitment to quality. SushiJin’s Edomae menu is a tribute to these seasonal treasures harvested from local waters. SushiJin earned its place in the prestigious World 50 Best Discovery list, and in the same year, Chef Kimura was honored as “The Maverick of the Year” by Esquire Magazine Japan in 2018.

Expect an opulent 17-course omakase menu, skillfully paired with a selection of Dassai sake that includes Dassai 23, Dassai 39, Dassai 45, and Dassai Beyond, supported by PT.
