Park Hyatt Jakarta is set to present a special edition of its A Nusantara Story dining programme, featuring a collaboration with Indonesian chef Norman Ismail. Available on 19 June, 26 June, and 3 July 2026, the limited-time experience will showcase a selection of dishes that draw inspiration from Indonesia’s diverse culinary traditions while incorporating contemporary cooking techniques.
Held at Dining Room, the collaboration forms part of Park Hyatt Jakarta’s ongoing effort to highlight regional Indonesian cuisine and the stories behind the country’s culinary heritage. Through a collection of specially curated dishes, guests will be invited to explore flavours and ingredients from different parts of the archipelago.
Regional Inspirations Through Contemporary Techniques
For the collaboration, Chef Norman Ismail has developed several signature dishes that reinterpret traditional Indonesian flavours through modern presentation and cooking methods.
Among the featured creations is Beef Tuturuga, which pairs sous vide beef tenderloin with pandan- and kemangi-infused beef jus, accompanied by cheddar kremesan, potato pavé, baby carrots, asparagus, pickled onions, and chilli oil.
Another dish, Tuna Lawa Baleh, combines tuna crudo with bilimbi, caramelised pineapple, green chilli, pomelo, and torch ginger-infused green oil, drawing inspiration from eastern Indonesian flavour profiles.
Guests can also sample Bakakak Parahyangan, a contemporary interpretation of the Sundanese chicken dish served with kari sauce, crunchy potato cake, peanuts, sambal bawang, and pickled lobak. Meanwhile, Andaliman Octopus highlights ingredients associated with North Sumatra, pairing grilled octopus with kalio reduction, deep-fried cassava ball, pickled shallots, fried shallots, and gendar.
Celebrating Indonesia’s Culinary Diversity
Chef Norman Ismail said the collaboration aims to explore the connection between food, culture, and regional identity.
“Indonesia’s culinary traditions are deeply rooted in place, memory, and community. Through this collaboration, I hope to celebrate those stories by presenting familiar flavors in a way that feels both meaningful and contemporary, while honoring the richness of our culinary heritage,” he said.
According to Denis Hermawan, Chef de Cuisine of Park Hyatt Jakarta, the A Nusantara Story programme was created to introduce guests to the breadth of Indonesian cuisine through collaborations and curated menus that highlight regional ingredients and culinary traditions.
“A Nusantara Story was created to celebrate the remarkable diversity of Indonesian cuisine. Collaborating with Chef Norman allows us to present a new perspective on regional flavors while remaining respectful of their origins. Together, we hope to offer guests a deeper appreciation of the ingredients, traditions, and culinary craftsmanship that shape Indonesia’s food culture,” he said.
A Nusantara Story at Dining Room
Presented as part of the restaurant’s existing A Nusantara Story buffet experience, the collaboration adds a new layer to the programme by introducing dishes inspired by different regions of Indonesia. The initiative reflects a growing interest among hotels and restaurants in exploring Indonesian culinary heritage beyond familiar national dishes, highlighting lesser-known ingredients, regional techniques, and local food traditions.
Available across three Fridays only, the collaboration offers diners an opportunity to experience Chef Norman Ismail’s interpretation of Indonesian cuisine while discovering stories and flavours from across the archipelago in a contemporary dining setting.
