NoMad Hilton Singapore is set to open in late 2026, marking the luxury lifestyle brand’s first property in Asia Pacific. Located along Orchard Road, the 19-storey hotel will introduce four original food and beverage concepts, positioning dining and cocktails as central elements of the guest experience.
The hotel will house NoMad Grill, The Tropicana Club, Sticky Fingers, and the poolside Lú Bar, each designed with a distinct culinary identity while reflecting NoMad’s signature approach to hospitality. Together, the venues aim to offer experiences that evolve throughout the day, from casual dining and desserts to cocktails and late-night entertainment.
According to Leo Robitschek, Global Head of Bars and Hospitality Development at Sydell, Singapore’s food culture played a key role in shaping the concepts.
“Singapore is one of the most exciting food and beverage cities in the world. Our goal is not simply to bring NoMad to Singapore, but to create something that feels genuinely connected to the city and its culture. Each venue has been designed with its own identity and energy, while sharing the warmth, generosity and sense of occasion that define the NoMad experience.”
Four Distinct Dining and Bar Concepts
Leading the hotel’s culinary offering is NoMad Grill, a modern interpretation of a New York-style chophouse combined with a classic brasserie. The restaurant will specialise in premium dry-aged meats cooked over wood fire alongside seasonal seafood and produce, while incorporating tableside service inspired by New York’s traditional dining culture.
Sticky Fingers, a new concept developed specifically for the NoMad brand, will overlook Orchard Road and operate as two venues in one. During the day, it will serve house-made gourmet soft-serve sundaes inspired by nostalgic desserts. By evening, the space will transform into an intimate cocktail bar where desserts and drinks are paired through seasonal ingredients and creative flavour combinations.
Meanwhile, The Tropicana Club takes inspiration from the golden era of cabaret, referencing both Havana’s historic Tropicana Club and Singapore’s own Tropicana Club, which opened in 1953. The cocktail programme will focus on classic drinks such as Martinis, Daiquiris, Manhattans and Cuban cocktails, alongside tropical creations incorporating ingredients from Singapore and Southeast Asia. Live music and DJ performances will complement the venue’s beverage programme throughout the day and into the evening.
Completing the collection is Lú Bar, a poolside lounge designed as a quieter retreat where guests can enjoy aperitif-style cocktails and light refreshments in a setting inspired by the symbolism of the heron.
International Culinary Team Announced
Alongside the hotel announcement, NoMad has confirmed several senior appointments that will oversee its culinary and hospitality operations.
Award-winning bartender Leo Robitschek, whose work has earned recognition including a James Beard Award for Outstanding Bar Program and appearances on The World’s 50 Best Bars, will continue to lead NoMad’s global beverage programme while guiding the Singapore opening.
The brand has also appointed Josh Harnden as Global Culinary Director. Harnden previously held leadership roles at Eleven Madison Park, One White Street, The Noortwyck, and the original NoMad New York, and will oversee NoMad’s global culinary direction while leading the food and beverage development of the Singapore property.
Joining him on the ground is Lorenz Hoja, who has been named Director of Culinary for NoMad Singapore. Having worked across England, France, Austria, the Maldives, and Singapore, Hoja spent more than a decade alongside renowned chef Joël Robuchon, including at the two-Michelin-starred L’Atelier de Joël Robuchon Singapore. He will oversee the hotel’s culinary programme, focusing on ingredient-driven cuisine and NoMad’s hospitality philosophy.
The hotel has also appointed Bernardo de la Garza as General Manager. Bringing more than 18 years of international hospitality experience, de la Garza most recently served as General Manager of The Standard, Bangkok Mahanakhon, following leadership roles with Six Senses, Hyatt Hotels, and Accor.
With its debut in Singapore, NoMad expands into Asia Pacific by placing food and beverage at the centre of the guest experience, introducing a collection of restaurants and bars designed to appeal to both international travellers and local diners.
