Inspired by his beloved grandmother, with whom he would make fresh pasta every Sunday; Chef Marco has become a devoted student of culinary science. He is deeply passionate about exploring new, distant places, meeting fellow chefs, and immersing himself in diverse food cultures.

Tuna Tartare
Chef Marco’s unique take on the classic Tuna Tartare, while different from Chef Tachibe’s 1984 invention, radiates with its own brilliance. Served with avocado mousse, spicy aioli, caviar, and sago tuiles, Chef Marco’s elevated Tuna Tartare offers a delectable and truly unforgettable culinary experience.

Black Truffle and Mushrooms Risotto
Prepared gueridon style, right in front of the guests, this dish is a celebration of simplicity and elegance.

Homemade Tiramisu
