Fresh pasta has a silky yet springy texture and a rich, almost buttery egg-yolk flavor far superior to store-bought pasta. Fresh pasta has a richer texture; it’s generally thicker – yet softer than dried pasta.

Akira Watanabe opened Pasta House AW Kitchen’s first restaurant in Nakameguro – Tokyo.
