Hosted at the Fraya Restaurant of Aloft South Jakarta Hotel, Aloft South Jakarta, and The Hermitage, a Tribute Portfolio Hotel, Jakarta presents a limited-seating dinner called “Four Hands Dinner – Local Temptation.” The event, which will be held on May 12th – 13th, 2023, will feature two chefs from both hotels to host a special dinner; Executive Chef Ferdian Tobing from The 1928 restaurant, The Hermitage Jakarta, and Head Chef Faisal Mustaqim of Aloft South Jakarta.
The 1928 restaurant from The Hermitage Jakarta is known as a casual dining restaurant with a colonial interior design and a beautiful setting that is perfect for any occasion, focusing on highlighting local Indonesian menus with modern techniques. Meanwhile, Fraya restaurant is an all-day-dining concept of Indonesian Comfort Food, focusing on traditional cooked dishes that have a distinctive charm. This four-hand dinner will present modern Indonesian dishes, which are the strong points of both restaurants.
“The purpose of this event is not only to participate in Marriott International Indonesia’s campaign to localize F&B, but we also present a variety of signature dishes from each chef, highlighting Indonesian dishes presented in a more modern way,” said Boy Fernando, F&B Manager of Aloft South Jakarta.
The presentation will consist of 5-courses and start with Amuse Bouche, which is Pempek, uniquely served in eggshells and containing cucumber and cuko (black vinegar sauce) foam. The first course will be Asinan Djakarta, which include vegetables such as sawi asin, and chives, wrapped with silk tofu and ebi crumble.
Continue with the Soup, Chef Tobing will present Mie Celor; a prawn tiger with noodles and ikura. The main course will be Sampyok, a typical Betawi menu that’s almost extinct, containing cassava and chicken balls wrapped in edible charcoal that uniquely resembled firewood. The Wagyu Empal Bakar course is next; a very tender beef cheek cut that is cooked slowly for 12 hours, served with pecel and chips that are made from nasi goreng. The “Go Local” experience will end with The Hermitage Jakarta’s Signature Dessert, Sweet Lee Anne, which consists of two traditional snack-inspired desserts, Jasucake (Jagung Susu Keju Cake) and Ontbijkook.
The special set menu is available for dinner at IDR 459,000++ per person, including special wine pairing supported by La Boheme Wine, a classic bistro wine that is ethereal, aromatic, textural, and sophisticated.
