Southern French cooking has found a new home in Jakarta with the arrival of Solène, a restaurant at The St. Regis Jakarta that looks to the Mediterranean coast for inspiration. The kitchen takes its cue from cuisine du soleil—a style of cooking rooted in Provence and the Côte d’Azur, where food is guided by the seasons, shaped by simple techniques, and meant to be shared at the table.
At the center of Solène is Chef Maxime Sacchetto Foglia, whose background spans Michelin‑recognized kitchens in Paris and Los Angeles. His approach blends classical French training with Italian influences, resulting in dishes that are refined but easy to enjoy. Before coming to Jakarta, he worked at Sofitel Le Scribe and Hôtel de Crillon in Paris, as well as Four Seasons Los Angeles.
The menu reflects the Mediterranean’s lightness and generosity. Plates such as Tartine de Tomates et Mozzarella de Bufflonne and Tataki de Thon showcase fresh produce and seafood, while the Crudo de Sériole and Daurade Rouge à la Vierge de Tomates highlight the coast’s flavors. A roasted cauliflower dish offers a plant‑based option, and the Tropézienne—a cream‑filled brioche from Saint‑Tropez—brings a classic note from Southern France. Chef Maxime describes the restaurant as a place where guests can relax, eat well, and spend time together without hurry.
The dining room mirrors the Riviera’s understated style. White walls carry coastal artwork, tables are dressed in crisp linens, and the lighting is warm and inviting. With space for about 70 guests, the atmosphere is intimate yet open, encouraging conversations to linger as meals unfold. Dinner service runs in the evening, creating a rhythm that feels unhurried and welcoming.
