Alila Villas Uluwatu is introducing a new dining programme, Indonesian Best-in-Class: A Culinary Collaboration Series, beginning with a one-night collaboration between its signature restaurant The Warung and Jakarta-based Indonesian restaurant Semaja.

Scheduled for 17 July 2026, the inaugural Four Hands Dinner will bring together Chef Eling Payana of The Warung and Chef Glenn Erari of Semaja to present a multi-course menu inspired by Indonesia’s diverse culinary traditions.

Held at The Warung overlooking Uluwatu’s limestone cliffs, the dinner is limited to 40 guests and is designed to showcase different interpretations of Indonesian cuisine through a menu that combines traditional flavours with contemporary techniques.

Two Chefs, One Celebration of Indonesian Cuisine

The collaboration pairs two chefs known for highlighting Indonesia’s culinary heritage through distinct approaches.

At The Warung, Chef Eling Payana has built a reputation for presenting Balinese and Indonesian cuisine while preserving traditional recipes and cooking methods. Beyond the restaurant, he is also active as a community leader in Bali’s Kelan Village, reflecting his close ties to local culture and traditions.

Meanwhile, Semaja has established itself as a contemporary Indonesian restaurant that reinterprets regional dishes through modern presentation while remaining rooted in the country’s culinary identity. Led by Chef Glenn Erari, the restaurant focuses on celebrating the diversity of the Indonesian archipelago through refined techniques and locally inspired flavours.

Together, the two chefs will create a menu that explores Indonesia’s culinary landscape, drawing inspiration from the country’s land, sea, and regional traditions.

Opening Chapter of a New Dining Series

The collaboration marks the first edition of Indonesian Best-in-Class, a new culinary series by Alila Villas Uluwatu that aims to spotlight some of Indonesia’s leading chefs and restaurants through a collection of collaborative dining experiences.

Set against the ocean views of The Warung, the series seeks to provide a platform for chefs to exchange ideas while introducing guests to different perspectives on Indonesian cuisine.

The inaugural The Warung x Semaja Four Hands Dinner will take place on 17 July 2026 at The Warung, Alila Villas Uluwatu.
