Fire, the signature grill restaurant at W Bali – Seminyak, has unveiled a refreshed dining concept that places wood, fire, and ash at the centre of its culinary approach. The relaunch introduces a new menu focused on open-fire cooking alongside a curated wine programme designed to complement the restaurant’s smoky, fire-led flavours.

The updated concept positions Fire as a modern grill serving elevated comfort food, where traditional cooking methods are combined with contemporary techniques to develop depth of flavour and texture. As part of the relaunch, the restaurant has also introduced a new Wine Wall featuring a curated selection of bottles chosen to pair with the menu.

According to Steven Peter, Executive Assistant Manager of Beverage & Food and Culinary at W Bali – Seminyak, fire remains the defining element of the restaurant’s identity.

“Fire is one of the most powerful elements of cooking. It transforms ingredients in ways that bring out incredible depth, texture, and character. With this new concept, we wanted to create a dining experience that celebrates transformation in every sense—from ingredient to plate, and from meal to memory.”

Collaboration Between Two Chefs

The new menu was developed through a collaboration between Senior Sous Chef I Made Sember and Executive Sous Chef Jules Winckler.

Chef Sember has been part of W Bali’s culinary team since before the resort opened, while French-born Chef Winckler brings international experience and a contemporary approach to open-fire cooking. Together, they have created a menu that combines locally inspired ingredients with global culinary techniques

Highlights from the New Menu

The refreshed menu showcases dishes that make use of wood-fire cooking across seafood, meat, and desserts.

Among the highlights is The Butcher’s Block, featuring a selection of premium specialty cuts prepared over an open flame. Seafood offerings include Reef Fish Crudo, served with yuzu, smoked crème fraîche, and seaweed crackers, while lighter dishes such as the Heirloom Tomato Salad combine green goddess dressing, chilled tomato consommé, and fresh basil.

For mains, guests can choose dishes including Dry-Aged Duck, served with crispy duck breast, potted leg confit, and sautéed kale. Desserts continue the fire-led theme with a Dark Chocolate Soufflé accompanied by spiced chocolate, sorbet, and cocoa nibs, alongside a Charred Lime Pie finished with lime gel and Swiss meringue.

The refreshed concept is available daily, with lunch served from 12 p.m. to 5 p.m. and dinner from 6 p.m. to 11 p.m., marking a new chapter for Fire as W Bali – Seminyak’s signature wood-fired dining destination.
