Sugar & Spice at InterContinental Jakarta Pondok Indah has introduced The Silk Road, a new Saturday night dinner concept inspired by the ancient trade route that once connected Asia, Central Asia, Persia, and the Mediterranean. Launching on 23 May 2026, the programme transforms the restaurant’s dinner buffet into an immersive culinary experience built around four historic Silk Road cities: Kashgar, Samarkand, Tabriz, and Istanbul.
Structured as a journey across different regions and culinary traditions, the experience combines themed dishes, tableside presentations, live carving stations, and regionally inspired beverages designed to reflect the flavours and atmosphere associated with the historic trade route.
Four Cities, Four Culinary Chapters
The journey begins with Kashgar, the historic crossroads city in Xinjiang where East Asia and Central Asia once converged. The menu here centres on Royal Da Pan Ji, a reinterpretation of Xinjiang’s Big Plate Chicken, paired with Silk Road Mint Smoke Tea, a Pu-erh tea infused with mint.
The next chapter moves westward to Samarkand, presenting dishes inspired by Central Asian flavours and plant-based cooking traditions. The Vegetarian Silk Road Garden highlights layered spices and aromatic ingredients, accompanied by Samarkand Nectar, a clarified fermented milk drink rooted in regional culinary traditions.
From there, the route continues into Persia through Tabriz, where the menu focuses on grilled dishes and tableside presentations. The featured Caravan Silk Fire Box arrives via guéridon service, filled with Persian-inspired grilled dishes designed to resemble a caravan chest arriving after a desert crossing. The dishes are paired with Sharbat-e Sekanjabin, a traditional drink made from honey, vinegar, and herbs.
The final destination is Istanbul, represented through the Bosphorus Seafood Experience, a seafood-focused tableside presentation where guests select and personalise seafood dishes prepared with salt crusts and aromatic finishing elements.
Fire-Grilled Meats, Skewers, and Desserts
Alongside the themed dining journey, the programme also includes a Silk Road Carving Atelier featuring fire-grilled tomahawk cuts and clay-oven roasted lamb, as well as a Kashgar Skewer Market serving Yang Rou Chuan lamb skewers cooked over open flames.
Desserts conclude the experience through a collection inspired by Silk Road ingredients such as saffron, pistachio, and pomegranate.
Beyond the food itself, the experience incorporates atmospheric elements designed around the idea of travel and exploration, including scented oshibori towels infused with earthy aromas and music inspired by the regions featured throughout the evening.
The Silk Road at Sugar & Spice officially begins on Saturday, 23 May 2026, with dinner service starting from 6 PM and continuing weekly every Saturday night.
