MDA Restaurants has announced the upcoming openings of Baker Butcher Barista (B3) and Carbón at Alaya Resort Ubud, both scheduled to launch in the second quarter of 2026. The expansion marks the group’s continued growth beyond Jakarta, introducing two of its dining concepts to Ubud.

The two venues are developed in partnership with Alaya Group as part of a new project on Jalan Raya Pengosekan, positioning the resort as a multi-concept dining destination within Ubud’s hospitality landscape.

Baker Butcher Barista: All-Day Dining with Multiple Formats

Baker Butcher Barista will operate as an all-day dining venue combining a bakery, café, and butcher-led kitchen within a single space. The concept brings together artisan baking, specialty coffee, and a menu of comfort-driven dishes, alongside house-aged steaks prepared using techniques associated with the group’s Aged+Butchered concept.

The menu is expected to incorporate a mix of international and Indonesian influences, with a focus on pastries, coffee, and grilled meats, structured to transition from daytime dining into evening service.

Carbón: Fire-Led Cooking Inspired by Latin America

Carbón will introduce a dining concept centred on open-fire cooking, drawing inspiration from the culinary traditions of Mexico and Peru. The menu will feature ingredients such as heirloom corn, ají peppers, and locally sourced seafood, alongside a range of grilled meats prepared over open flames.

The restaurant will also include a rooftop bar and cigar lounge, expanding the concept beyond dining into a broader hospitality format.

 

Expanding a Multi-Concept Dining Portfolio

The Ubud openings form part of MDA Restaurants’ wider portfolio, which includes concepts such as Animale, Aged-Butchered, Carbón, Wabi-Sabi, and Ironplate in Jakarta. The group has continued to expand in recent years, with additional projects planned across Indonesia.

Further details, including menus and official opening dates, are expected to be announced closer to launch. With these additions, Alaya Resort Ubud is set to expand its culinary offerings while contributing to the development of Ubud’s dining scene.
