TENKAI Japanese Nikkei Restaurant at Padma Resort Legian has introduced a revamped à la carte menu, led by Executive Sous Chef Juan Carlos Jara Eyzaguirre, bringing a renewed focus on the interplay between Japanese techniques and Peruvian flavours.

The update marks a new direction for the restaurant’s Nikkei concept, with dishes shaped by Chef Juan’s personal background and culinary experience. Originally from Peru, he draws on ingredients and flavour profiles from his heritage, incorporating elements such as aji amarillo, aji panca, and rocoto, which add depth, heat, and acidity across the menu.

Following a recent trip to Peru, Chef Juan brought back chilli seeds that are now being cultivated in the resort’s North Garden. The initiative allows the kitchen to recreate more specific flavour profiles while introducing guests in Bali to ingredients closely tied to Peruvian cuisine.

A Menu Shaped by Geography and Technique

The new menu reflects the diversity of Peru’s landscapes—from coastal seafood to highland and Amazonian influences—interpreted through Japanese culinary techniques. The result is a selection of dishes that balance precision with bold, layered flavours.

Among the highlights is Seafood Chahan, a dish rooted in Chef Juan’s early career in Japanese kitchens, now reintroduced as part of TENKAI’s current menu. Other dishes include Rocoto Tiradito Lobster, Buta Yakigyoza, Anticuchero Maki Nikkei, and Parihuela Udon, each combining Japanese formats with Peruvian seasoning and ingredients.

The restaurant also introduces Premium Nigiri Nikkei, a new selection that reinterprets classic nigiri through a Nikkei lens, incorporating Peruvian elements into traditional sushi preparations.

Chef Juan describes the menu as an attempt to bridge both culinary cultures through flavour. “I want guests to feel like they are taking a trip to Japan, but when they close their eyes, they discover the flavours of Peru,” he says.

Located within the tropical grounds of Padma Resort Legian, TENKAI has built its reputation around its Nikkei concept, combining Japanese and Peruvian influences across its à la carte offerings, izakaya-style dining, and teppanyaki experiences.

With the introduction of the new menu, the restaurant continues to evolve its approach, placing greater emphasis on ingredient sourcing, personal storytelling, and the cultural exchange that defines Nikkei cuisine.
