The Indonesian bar scene stirs with pride as TOMA Brasserie under the Toma Group clinches a prestigious recognition at the recently concluded Asia’s 50 Best Bars Awards 2024 held in Hong Kong. This highly esteemed event, known for its rigorous selection process and global recognition, saw TOMA’s latest seasonal menu, “Kolaborasi,” secure a coveted spot in the Top 3 for the Siete Misterios Best Cocktail Menu Award 2024.

This achievement spotlights TOMA’s innovative approach to mixology. Inspired by Jakarta’s motto, “Jakarta Kota Kolaborasi” (Jakarta, City of Collaboration), the “Kolaborasi” menu celebrates the city’s vibrant tapestry of cultures. It blends Asian culinary influences with creative cocktails, offering a truly collaborative dining experience.

The menu itself is designed for seamless exploration. A user-friendly matrix highlights each drink’s flavor profile, categorizing them as aperitifs, mains, or digestives for perfect food pairings.

“KOLABORASI” elevates the dining experience beyond mere consumption. It’s a symphony of thoughtfully paired flavors, where every sip enhances the food, and every bite enriches the drink. Guests can embark on an enticing “collaboration” journey with seven carefully crafted cocktails designed to complement TOMA’s authentic Asian-inspired cuisine.

Standout creations include the “Rambootan,” a captivating aperitif that balances the spice of the Minang Beef Curry Paratha. This floral cocktail features rambutan, shiso umeshu, gin, and lychee liqueur, with a touch of rambutan-infused oolong tea for a delightful fruity intrigue.

One such example is the “Cikala Punch Punch,” a bold and tropical delight featuring rum, zesty lemon, and a touch of bitterness. Grilled pineapple adds smoky sweetness, balanced by the tangy tartness of asam cikala. Spicy kweni mango introduces a hint of heat, further complemented by the lemon torch ginger foam. This vibrant creation pairs perfectly with the Nasi Goreng Seafood Kecombrang, enhancing its complex flavors.
