Rumari and Friends is a unique presentation of bonds formed between world-class and a celebration of the culinary magic that happens when cultural fusions are undertaken in the kitchen. Traditions, techniques, and styles are combined by renowned chefs, resulting in a unique and exclusive gastronomic experience.

This month, Raffles Bali’s Culinary Director Chef Gaetan Biesuz and his culinary team are excited to be working hand in hand with two incredible chefs from Bangkok, Thailand.

Chef Thitid ‘Ton’ Tassanakajohn is the Executive Chef and Owner of celebrated Bangkok restaurants Le Du, Baan, Nusara, and Mayrai. With one Michelin star and many other accolades under his belt, this is set to be a remarkable experience.

Chef Ton’s love of cooking comes from his upbringing around the fragrant kitchen of his mother and grandmother. Since graduating from The Culinary Institute of America, Ton’s work experience has spanned several Michelin-starred restaurants, including Eleven Madison Park, The Modern and Jean Georges. Now with his own restaurants, he pays tribute to the cooking of his younger years by masterfully applying French-European techniques to Thai dishes and produce. This has set him apart in Bangkok’s culinary scene and led him to become the only Thai chef with 2 restaurans on the prestigious Asia’s 50 Best restaurants list. Le Du is awarded as #1 Asia’s 50 Best Restaurants 2023 and Nusara is awarded as #3 Asia’s 50 Best Restaurants 2023.

The icing on the cake of this third installation of Rumari and Friends is dessert by entrepreneur-turned pastry chef Dej Kewkacha. This self-taught patissier has graced the kitchens of some of the world’s most prestigious restaurants, including 2 Michelin-star Ta Vie in Hong Kong.

His flagship Bangkok restaurant Kyo Bar serves 4-7 course dessert degustation using the very best Japanese and Thai ingredients, which evolve with the seasons. This contemporary take on pastry techniques and presentation has led him to be the only pastry chef featured in 2023 Asia’s 50 Best Signature Events, as well as Kyo Bar being named Best Dessert Cafe by Bangkok’s Best Restaurant Awards in 2019.

Chef Gaetan, Chef Ton, and Chef Dej are a dream team with their focus on sustainability and passion for local and seasonal produce. Chef Gaeton oversees Raffles’ kitchen gardens, hand selecting ingredients, as well as sourcing locally grown and caught elements from local fishermen and producers. His innovative use of the archipelagi’sbounty is seen in every dish.

As with the past two events, Rumari and Friends Chapter Three will take place with the breathtaking views only Rumari can offer. The main dining room faces out to Jimbaran’s blissful sunsets, the ideal setting for an exclusive culinary experience. With the gentle breeze coming off of Jimbaran bay and the lush hillside, the feeling of connection to the land is palpable.
