Maison Boulud Singapore officially opened at Marina Bay Sands on 7 February 2024, bringing a unique dining experience from internationally acclaimed chef and restaurateur Daniel Boulud to the iconic integrated resort.

This menu is the result of Chef Boulud’s creative interpretation of classic French dishes, combined with the freshest seasonal ingredients, with a touch of inspiration from his travels around the world.
Start your meal with the freshest ingredients in the seafood salad, consisting of succulent seafood, crunchy haricot leaves and fresh tomato halves, served with rich and savory basil, black olive pesto and anchovy garlic dressing for an umami kick; then enjoy the signature seafood platter, consisting of the finest oysters, Maine lobster, prawns and fish tartar, a favorite among db Bistro & Oyster Bar diners. Savor the crunchy sensation of pastilla enveloping succulent lobster, served with anise and preserved lemon, and a sprinkling of Moroccan spices in chermoula sauce; or the Mediterranean-inspired claypot rice, where Chilean sea bass drizzled with black pepper sauce takes center stage. A sweet masterpiece of Citron Pistache vacherin – an iconic French dessert – will await at the end of the meal, where a harmonious blend of sumptuous ricotta gelato crowned with delicate Sicilian pistachios and a refreshing burst of lemon gel and meringue will provide the perfect finale.
Diners can also look forward to a selection of wines from France and around the world, as well as a mixology program featuring classic and original aromatic aperitifs made to complement the restaurant’s culinary creations, such as the Queen Potion that combines the crispness of vodka, the warmth of amaretto and the freshness of citrus.
Maison Boulud Singapore is helmed by Executive Chef Rémy Carmignani, a seasoned chef in French cuisine with experience working at various award-winning restaurants, including Guy Savoy Paris and Singapore, as well as Le Français at the iconic La Mamounia Hotel in Marrakech. He is assisted by Executive Sous Chef Vincent Yong, who led the talented team from the previous db Bistro & Oyster Bar. Chef Mandy Pan, an expert in the world of confectionery and a student of Chef Boulud, rejoins Marina Bay Sands as Executive Pastry Chef at Maison Boulud.
Located at B1-15 and L1-83 at The Shoppes at Marina Bay Sands (South Promenade), the 146-seater restaurant features cozy indoor seating areas on both levels as well as an outdoor terrace on the upper level. Lunch and dinner are served daily, and the casual alfresco menu features db Bistro’s crowd favorites, such as the Original db Burger.
