Magnaye, head chef of Serai in Melbourne and recipient of the Best New Restaurant of 2023 award by Gourmet Traveller Magazine, is renowned for blending the finest Australian ingredients with bold Filipino flavors. His culinary creations, praised by notable chefs and food critics worldwide, will be presented alongside new dishes specially crafted for these events.
Guests can look forward to a menu that includes Warm Oysters with smoked beef fat, Wood-Grilled Scallops with Siargao butter and sambal matah, and a unique spin on Philippine ceviche, “Sinuglaw,” featuring raw hamachi and pork crackling. The takeover also includes other signature dishes such as Beef “Kilawin” with roasted bone marrow, Filipino Roast Chicken with Pinoy BBQ sauce, and a Woodfired Pork Chop with smoked banana sauce.
