Now, it’s being reimagined in Jakarta with a fire-led approach that stays true to its roots while offering something fresh.

The restaurant’s new paella offerings reflect the heart of Spanish cooking—simple ingredients, cooked slowly, and meant to be shared. One version, Arroz Meloso de Setas con Trufa Negra y Queso Manchego, features creamy rice with wild mushrooms, black truffle, and grated Manchego cheese, bringing together earthy notes and soft textures. Another highlights the sea, Paella de Mariscos con Lomos de Pargo Rojo Soasados y Alioli de Gambas, with golden rice infused with Mediterranean spices, topped with flame-seared red snapper and prawn aioli. For those drawn to deeper flavors, Paella de Erretxuleta a la Parrilla con Alioli de Tuetano y Chips de Ajo with a bold take with grilled txuleta steak, bone marrow aioli, and crisp garlic chips, combining smokiness and richness in every bite.
