Wing Lei Bar at Wynn Palace has launched its latest cocktail program, UNITY, a menu shaped by international travels, guest shifts, and cultural exchanges that reflect the evolving dialogue of global mixology.

The debut of UNITY follows a landmark year for Wing Lei Bar, which recently hosted the Asia’s 50 Best Bars 2025 awards along with a series of guest shifts by leading bartenders from around the world. Head Mixologist Mark Lloyd distilled these experiences into a collection that embodies memories of collaborations, friendships, and flavors discovered in cities from Mexico to Milan, Singapore to Seoul.

“Every one of these cocktails is born of connection,” said Lloyd. “Guest shifts, collaborations, nights out that turn into lifelong friendships, they remind us that cocktail culture is a global dialogue. UNITY is about inviting guests into that dialogue, one experience at a time.”

Four Chapters of UNITY

The new menu is divided into Classics, Sours, Alternatini, and Stirred, each reinterpreting timeless cocktail styles through cultural encounters.

  • Classics Reimagined includes Tommy’s Holiday, an ever-evolving tribute to Julio Bermejo’s iconic margarita, reworked monthly with regional flavors. Not Quite a Penicillin nods to Sam Ross’s modern classic but introduces Cantonese touches with oyster sauce and sand ginger, while Peanut Pistol channels Americana with bourbon, coffee liqueur, and peanut butter.

  • Sours with a Story traces connections to cities across Asia and Europe. Manchester Tart recalls Lloyd’s English boarding school days with custard and raspberry notes; Kaya blends mezcal, sake, and kaya jam from Singapore; while Dak-Galbi brings Seoul’s fiery energy with chili mezcal and banana-infused makgeolli.

  • Alternatini: Cocktails Without Borders leans into playful experimentation. Highlights include Unfaithful Scotsman, combining Scotch whisky with chili crisp peach and cumin; Clear & Spressy Danger, an espresso martini riff with pandan and soy sauce; and Basil Smash, a parmesan gin cocktail created in Milan.

  • Stirred, Strong, and Spirited offers contemplative serves. Hand of God layers banana-infused whiskey and Campari, inspired by Buenos Aires’ Tres Monos; Miami Vice Negroni introduces tropical flavors like pineapple and coconut; while Soi on the Left blends Thai soy milk tea with Chinese tea liqueur and rum.

A Global Perspective from Macau

Since opening, Wing Lei Bar has been recognized for pairing Wynn’s refined hospitality with bold storytelling in drinks. UNITY continues this legacy, positioning the venue not only as a luxury destination but also as an influential platform in shaping contemporary cocktail culture.
