COMO Uma Canggu has unveiled the final chapter of its 2025 Culinary Odyssey series with the Karangasem Edition, a collaboration with the renowned Bali Asli Restaurant. Running from August 14 to September 30, 2025, the program highlights East Bali’s culinary and cultural heritage through the ceremonial dining tradition of megibung.
First introduced in the royal courts of Karangasem, megibung was created as a way to unite communities by sharing food. Today, this tradition continues in rituals and festivals, and for a limited time, it is being brought to COMO’s dining tables as a curated lunch and dinner experience.
The menu is designed by Bali Asli’s founder and Executive Chef Penelope Jane Williams, who draws on regional cooking techniques and locally sourced ingredients. Dishes include be siap mepanggang, baby Balinese chicken marinated in traditional spices and grilled over coconut husks; pesan telengis gerang, a smoky parcel of coconut curd, bean sprouts, and dried whitebait; and tapé goreng, a Karangasem specialty of fermented cassava fried in crisp batter. Other highlights feature bamboo-steamed Sidemen red rice, jackfruit curry, and barbecued coconut curd.
Complementing the food is a series of Karangasem-inspired beverages. Signature cocktails include Bali Beneath the Trees, blending arak, gula pasir fruit, and lemongrass; the Arsana Negroni, infused with kaffir lime and ginger; and Temple Bloom, uniting brem rice wine with elderflower and citrus. Non-alcoholic options such as the Sacred Spring mocktail, made with cold-brewed lemongrass, tangerine, and ginger flower syrup, pay homage to the region’s natural landscapes and sacred waters.
