The St. Regis Jakarta has announced the appointment of Jérémy Degras as Executive Chef, ushering in a new chapter for the hotel’s culinary program with his extensive international experience and refined gastronomic vision.

A French national, Chef Degras has built a distinguished career across Europe and the Middle East, with a résumé that includes leadership roles at some of the world’s most acclaimed properties. Most recently, he served as Executive Chef at Badrutt’s Palace Hotel in St. Moritz, Switzerland, where he led a team of over 70 chefs across 11 restaurants and bars. During his tenure, the hotel earned three MICHELIN Keys and secured spots on Condé Nast Traveler’s Gold List and The World’s 50 Best Hotels.

Trained in classical French technique and shaped by a career in Michelin-starred kitchens, Chef Degras honed his craft at La Rotonde under Philippe Gauvreau in Charbonnières-les-Bains and Le Parc under Franck Putelat in Carcassonne, as well as at the Burj Al Arab in Dubai and The Ritz-Carlton Al Hamra Beach. His approach blends precision, modern sensibility, and sustainability, reflecting a philosophy rooted in both tradition and innovation.
