InterContinental Bali Resort in Jimbaran is hosting Indonesian culinary figure William Wongso for a seven-day culinary residency from August 18–24, 2026. The program brings Wongso together with Executive Chef Indrajit Saha and the resort’s culinary team to review recipes, techniques, and the use of indigenous ingredients across its Indonesian offerings.

Known for his work documenting and promoting Indonesia’s culinary heritage, Wongso is working directly with the team through hands-on mentoring and recipe refinement. The residency focuses on regional Indonesian cuisine, including the origins of ingredients, preparation methods, traditional cooking techniques, and the balance of flavors that define different dishes.

“Indonesia has an extraordinary culinary heritage, with every region offering its own identity, ingredients and traditions,” said Wongso. “When we refine a dish, it is important that its identity remains intact.”

During the seven-day program, existing recipes are being reviewed and refined while maintaining the character of their regional origins. The collaboration also gives the resort’s culinary team an opportunity to deepen its understanding of Indonesian ingredients and cooking traditions.

According to Resort Manager Abdul Hafid, the residency is part of the resort’s longer-term approach to developing its Indonesian culinary identity. Knowledge and recipes developed during the program will continue to inform selected Indonesian dishes across the resort’s dining venues.

The residency is therefore positioned as more than a one-off guest chef collaboration, with its focus on knowledge transfer and building the culinary team’s capabilities. The refined recipes and techniques are expected to shape how Indonesian cuisine is presented to guests at InterContinental Bali Resort beyond the seven-day program.
