Wabi-Sabi is welcoming autumn with a new Grand Omakase built around seasonal Japanese ingredients and contemporary interpretations of Japanese cooking techniques. Available from September 11 through the end of November 2026, the tasting menu moves from lighter seafood and produce-based courses into richer dishes before finishing with a Japanese-inspired take on the classic campfire s’more.
The menu begins with Stone Fruits, pairing yellowtail with tomato dashi to bring together natural sweetness and acidity. Kabocha & Bafun Uni follows with Japanese kabocha and Bafun uni, a prized Hokkaido sea urchin known for its rich, sweet and creamy texture, served in a delicate chawanmushi with foie gras and spiced honey.
Morel Mushroom introduces an earthy element, combining the mushrooms with silky shrimp mousse and mushroom glaze. Foie gras returns in Foie Gras Crémeux, where its richness is balanced with tart sudachi, a Japanese citrus, and Granny Smith apple.
Seafood and A5 Japanese Beef
The Sakana course changes according to the day’s catch, allowing the menu to feature the best available seafood. Guests can then choose between two A5 beef preparations: Tomo Sankaku, charcoal-grilled A5 tri-tip served with parsnip purée, or A5 Kagoshima Hime, featuring chargrilled tenderloin with fresh wasabi.
The savory courses continue with Tome Wan Chazuke, combining grilled tiger prawns with shrimp dashi rice and a genmai-paella “tea” poured as part of the dish.
A Japanese Take on S’mores
Dessert takes a lighter and more playful direction with S’more, Wabi-Sabi’s interpretation of the campfire classic. The dish combines brown butter–tamari ice cream with marshmallow and caramellia, bringing together sweet and savory elements to close the tasting menu.
The Autumn Grand Omakase is priced at IDR 1,350,000++ per person and is available from Friday, September 11 until the end of November 2026. Advance reservations are required.
