The Langham, Jakarta is closing its fifth-anniversary celebration, Savour the Art of Five, with a culinary collaboration between Italian chef Maurizio “Mauri” Bombini and ALICE by Tom Aikens. Running from September 29 to October 1, 2026, the limited-time dining experience brings together Chef Mauri’s approach to Italian cuisine and the restaurant’s French bistro setting.

With more than 15 years of international culinary experience, Chef Mauri is known for his interpretation of Italian cuisine, drawing on his Mediterranean heritage and roots in Puglia. For this collaboration, his cooking is presented through a menu that combines Italian flavors with French culinary techniques, focusing on ingredients and preparation.

The menu begins with Stuzzichino di Benvenuto, a charcoal bun served with eggplant purée and truffle cream cheese. This is followed by Tonno, a tuna tartare paired with house-made burrata, basil oil, citrus sabayon and vinaigrette.

One of Chef Mauri’s signature creations, Parmigiano Ravioli, features 24-month-aged Parmigiano Reggiano and clarified onion consommé. For the main course, Branzino “Pizzaiola” reinterprets a southern Italian classic with pan-roasted fish and a reduction of tomato, garlic and fresh herbs.

The meal concludes with Chef Mauri’s signature Tiramisù, inspired by childhood memories in Puglia. The dessert combines mascarpone cream and espresso-soaked ladyfingers with a contemporary textural element.

The collaboration is available as a four-course lunch set menu priced at IDR 588,000++ per person and a six-course dinner set menu starting at IDR 880,000++ per person. Curated beverage pairings are available upon request.

Part of Wonderful Indonesia Gastronomy 2026

The collaboration also marks The Langham, Jakarta’s participation in Wonderful Indonesia Gastronomy (WIG) 2026, a program celebrating gastronomy as part of Indonesia’s tourism and cultural landscape.

Through the partnership, the hotel brings an international culinary perspective to Jakarta’s dining scene, using the collaboration to highlight the role of food in cultural exchange and connection. The event also provides a platform for local and international culinary communities to come together, reflecting Jakarta’s position within Indonesia’s developing gastronomy movement.

The WIG collaboration forms part of the closing chapter of Savour the Art of Five, the hotel’s fifth-anniversary program, which has featured culinary talent, collaborations and dining experiences over the course of the celebration.

“Savour the Art of Five has been a celebration of five remarkable years of The Langham, Jakarta, bringing together exceptional culinary talents, inspiring collaborations and memorable experiences. We are delighted to welcome Chef Mauri to ALICE for the finale of this journey. It is particularly meaningful that this collaboration also marks our participation in Wonderful Indonesia Gastronomy 2026, allowing us to celebrate the role of gastronomy in connecting cultures, inspiring discovery and enriching the tourism experience,” said Alexander Poindl, General Manager of The Langham, Jakarta.

Chef Mauri’s dining collaboration at ALICE by Tom Aikens runs until October 1, 2026, concluding the hotel’s fifth-anniversary celebrations with a menu that brings French and Italian culinary influences together.
