At The Laguna, a Luxury Collection Resort & Spa, Nusa Dua, Bali, an unprecedented adventure led by two culinary teams is brought to life at the newly designed Nusa Bagus Island in a 6-course full dinner menu with selected beverages. The Cave by Chef Ryan Clift is well-known for its innovative dining experience. It is located inside a natural subterranean cave to showcase a stunning combination of fine dining and incredible scenery. In the upcoming season, The Laguna, a Luxury Collection Resort & Spa, Nusa Dua, Bali will welcome a collaboration dinner with Chef Tay Chan Yong, the head chef of The Cave.
The collaboration dinner will be located at the newly transformed Nusa Bagus Island. This is an exclusive, intimate venue surrounded by water features and offering captivating views of our turquoise lagoon. A tranquil waterfall provides a soothing backdrop, perfect for a dinner date with your loved ones. Diners at the collaboration dinner will be the first guests to experience the scenery of Nusa Bagus Island and to enjoy the ingenious food.
The Cave’s Head Chef Tay Chan Yong, and his culinary team will work with The Laguna Bali’s F&B department to feature Chef Chan’s signature menu, showcasing international cuisines with Asian fusion. Chef Chan has enjoyed a long and distinguished career with Ritz-Carlton, culminating in his appointment as a chef de partie, then moving to Tippling Club as a sous chef for over five years. These valuable experiences have led him to become a rising star on the island. “Discipline is the most important aspect to uphold standards and gain even greater achievements. With everything I have learned so far, I want to be of good use to the team and lead them to achieve all our goals,” says Chef Chan.
As you stroll through nature to the waterfront to Nusa Bagus Island, Chef Chan will be preparing delicious temptations, such as tuna taco with a crispy tortilla wrapped around salmon ikura, and treasured dishes like 48-hour short rib, a prime quality short rib slow-cooked at a low temperature for 48 hours and served as perfection, all to be enjoyed in the gentle evening breeze while taking in the view of the clear lagoon.
