The Cave by Chef Ryan Clift in Uluwatu has introduced its latest tasting menu, featuring ten courses that reflect a combination of modern techniques, international inspiration, and local flavors. Set within the restaurant’s natural subterranean space, the new menu marks Head Chef Nikhil Sengupta’s first full menu since joining the team.
Developed under the creative direction of Chef Ryan Clift, the tasting menu continues the restaurant’s focus on texture, balance, and narrative-driven dishes. “My inspiration comes from both global influences and the rich traditions of Bali,” said Chef Nikhil. “Each dish is designed not only for taste but to create an experience that lingers beyond the meal itself.”
Highlights from the new menu include the Crab Taco with enoki mushroom, pistachio, and sour starfruit; Tournedos Rossini, featuring steak tartare, foie gras, bone marrow, truffle, and egg yolk; and Lawar Plek, a contemporary interpretation of Balinese tuna ceviche with bumbu Bali, coconut, and rice. Other courses include Scallops & Watercress, combining confit Hokkaido scallops with wasabi and potato fondant, and Foie Gras Cannoli, served with mandarin, pistachio mousseline, and an eight-spice blend.
Following a short intermission, guests are presented with seafood and meat dishes such as Ocean Trout Bouillabaisse and Smoked Lamb with Cauliflower, before concluding with dessert courses like a Rock Melon Cocktail and a reimagined Mango Sticky Rice.
Chef Ryan Clift described the new menu as an exploration of balance and creativity. “It reflects the collaboration between global gastronomy and Bali’s local produce,” he said.
