Santanera’s rooftop turned into a lively hub of Latin flair during its reimagined Cinco de Mayo celebration, running from 2 to 5 May. Bringing together food, music, and vibrant community spirit, the event blended traditional flavors with contemporary flair, led by Executive Chef Andrés Becerra and featuring special collaborations with Segno Bar, Ettore Gelato, and Código 1530.
At the heart of the culinary offering was a bold menu rooted in Mexican influences and crafted for the occasion. Seafood took the spotlight with prawn and octopus tostadas topped with jalapeño mole, delivering a fresh, spicy bite. The short ribs birria—slow-cooked and served with handmade tortillas and a trio of salsas—offered a heartier interpretation of comfort food with rich, soulful flavors.
Desserts were developed in partnership with Ettore Chiodini of Ettore Gelato, bringing a refined yet playful close to the menu. A standout dish was the tequila-infused chocolate tart accompanied by extra virgin olive oil gelato and a topping of caviar. Another indulgent option featured strawberry and white chocolate ganache infused with Código Mezcal, merging sweet and spirited notes.
Cocktails curated by Sebastian Von Arx of Segno Bar leaned into the festive atmosphere with Código 1530 spirits as their base. From spicy infusions to tropical accents, the drinks were designed to match the energy of the celebration.
More than just a food event, the rooftop celebration aimed to honor the roots of Cinco de Mayo—commemorating cultural pride and resilience—while offering a contemporary take suited to Bali’s diverse and multicultural audience. “It’s not just about marking a date on the calendar,” said Chef Andrés. “It’s about reimagining a celebration with a modern twist, embracing culture through flavors and community.”
