Santanera, the Bali restaurant known for its lively dining style, will bring its cooking to Singapore for one evening on 19 April 2026. The takeover will take place at Wildcard on Havelock Road, part of the Sunday Test Kitchen Series, and will present Santanera’s Latin American flavors in a more intimate setting.

The menu is designed for sharing, beginning with Air-Dried  Yellowfin  Tuna  (Mojama) served with stracciatella, smoked tomatoes, and salsa macha. Smaller dishes follow, including Scallop  Tostada  with  sambal; Wagyu  Intercostal  wrapped  in  a  thin  rice  arepa  with  salsa  roja;  and  a  Torta  Ahogada  with  fried red snapper, served alongside a prawn and habanero bisque for dipping.   Santanera’s  Ceviche  Mixto, prepared with a creamy corn leche de tigre, leads into a Kurobuta pork chop paired with caramelised apple and gooseberries. The evening closes with churros served alongside dark chocolate, vanilla ice cream, and dulce de leche.

Chef Andres Becerra, who leads Santanera, draws on his Colombian roots and international experience to create food that emphasizes sharing and connection. He describes the approach as generous and communal, shaped by memory and instinct.

Wildcard, founded by Denise Lum, provides the setting for this collaboration. Known for produce-driven cooking, lo-fi wines, and cocktails, it offers a space where Santanera’s layered flavors can settle naturally. The takeover brings a distinct expression of Bali’s dining scene into Singapore, focusing on closeness, detail, and the spirit of convivial dining.
