Pan Pacific Jakarta introduces a new chapter at Keyaki Japanese Restaurant with the appointment of Chef Tadashi Inose as Executive Japanese Chef. Located on the 90th floor of the hotel, Keyaki is known not only as the highest Japanese restaurant in Jakarta, but also for its dedication to refined and authentic Japanese cuisine. Chef Tadashi brings over 40 years of experience to the culinary team, reinforcing Keyaki’s commitment to quality and innovation.
Chef Tadashi’s arrival marks a continuation of Keyaki’s pursuit of culinary excellence, blending traditional techniques with modern presentation. His approach to leadership is described as collaborative and hands-on, with a focus on developing team potential and ensuring memorable guest experiences.
To celebrate his debut, Chef Tadashi introduces four signature dishes that reflect his refined interpretation of Japanese culinary traditions. Among the highlights is the Alaskan Black Cod Pirikara, marinated in miso and glazed with kanzuri chili citrus for a balance of sweet, spicy, and umami flavours. Another standout is the Mizu Mochi, a delicate dessert made to resemble a dewdrop, served with kuromitsu syrup and kinako powder—offering a soft, fresh texture and a hint of nuttiness.

Other new offerings include Tuna or Salmon Tataki Sashimi with truffle sauce and Aspara Shiitake Kuwayaki with Yuanji sauce and crispy garlic chips—dishes that blend precise technique with comforting flavours.
As part of this culinary refresh, Keyaki also introduces a new weekday lunch buffet. Designed to elevate the midday dining experience, the buffet features a variety of Japanese dishes made with high-quality ingredients. Highlights include freshly made sushi, teppanyaki-style seafood, robatayaki grill, and yaki udon, followed by desserts like matcha tiramisu.
