Hotel Indigo Bali Seminyak Beach marked its ninth anniversary on 19 June with its “9 to 9 of a 9-Year Journey” celebration, a full-day programme combining community initiatives, cultural activities, and a series of food and beverage experiences that highlighted the property’s culinary identity.

While the anniversary centred on community engagement through beach clean-ups, cultural workshops, and local partnerships, food and drink played a prominent role throughout the day. The hotel’s lobby was transformed into a Neighborhood Market, where guests could participate in culinary activities including sambal-making workshops, tropical fruit carving demonstrations, and tastings inspired by Indonesian traditions.

The anniversary programme also served as an opportunity to showcase the evolving dining concepts within the resort, from contemporary plant-based cuisine at SugarSand to signature cocktails that have shaped Tree Bar’s identity over the past nine years.

SugarSand Presents a Plant-Based Chef’s Table

As part of the anniversary celebrations, SugarSand introduced a special Botanical Chef’s Table, a nine-course plant-based tasting menu created exclusively for the occasion by newly appointed Chef de Cuisine Chef Ega.

Designed as a one-day-only experience, the menu explored Indonesian ingredients and flavours through a contemporary lens. Dishes included Laklak Reborn Shots, featuring pickled bitter gourd blossoms and truffle tempe chips, The Benoa, a ceviche-inspired dish combining sea grapes, avocado, galangal, and rujak bulung emulsion, and Mediterranean in Bali, which paired vegan kalio with pumpkin gnocchi and sunflower gremolata.

The menu concluded with desserts such as Anggur Merah, combining grilled grapes with coconut and lime sorbet, and Beets Klepon, a reinterpretation of the Indonesian sweet featuring coconut mousse, palm sugar, and cashew.

The tasting menu reflects SugarSand’s ongoing exploration of modern coastal dining, combining global techniques with Indonesian ingredients and local influences.

Tree Bar Revisits Nine Years of Cocktails

At Tree Bar, the anniversary was celebrated through “Nine Chapters, One Celebration,” a retrospective cocktail programme featuring nine signature drinks representing different years of the venue’s journey since opening in 2017.

Priced at IDR 99,000 per glass, the collection traced the evolution of the bar’s cocktail programme through creations such as Laklak Reborn, Mr. Cave, Tambring #2, Elevation, Kiwi Cooler, Pineapple Passion, Watermelon in the Garden, Jalisco Mule, and Citrus Garden.

The drinks incorporated a variety of spirits and local ingredients, highlighting how the bar’s beverage programme has evolved alongside the hotel over nearly a decade.

Celebrating Indonesian Culinary Traditions

The anniversary programme also placed a spotlight on Indonesian food culture through a series of interactive experiences.

Guests were invited to participate in a Sambal-Making Workshop, offering insight into one of Indonesia’s most important culinary traditions, while a Tropical Fruit Carving Class led by award-winning Chef Agustin showcased decorative carving techniques using locally sourced tropical fruits.

Throughout the day, a Traditional Jamu Station introduced guests to Indonesia’s herbal drink culture. Running from 7 AM to 5 PM, the activation featured locally produced jamu and aimed to reintroduce the traditional beverage to both domestic and international visitors.

Dining by the Beach in Seminyak

Located along Seminyak Beach, Hotel Indigo Bali Seminyak Beach has developed a food and beverage portfolio that reflects its neighbourhood-inspired philosophy. SugarSand has become known for its beachfront setting and contemporary dining experiences, while Tree Bar serves as a casual gathering place focused on cocktails and sunset views.

The anniversary celebrations highlighted how the resort continues to integrate food, drink, and local culture into its guest experience. Alongside community initiatives and sustainability programmes, the culinary offerings provided another way for guests to engage with the stories, traditions, and flavours that have shaped the hotel since its opening in 2017.

As Hotel Indigo Bali Seminyak Beach enters its tenth year, the anniversary programme demonstrated how its food and beverage venues continue to evolve while remaining connected to the local community and culture that inspired them.
