Bel Étage in Jakarta will host Executive Chef Kenji Yamanaka of The Ritz-Carlton, Fukuoka for Taste of Hakata Bay from September 18 to 20. The three-day collaboration will feature a seafood-focused dinner on Friday followed by Japanese-inspired brunch offerings on Saturday and Sunday, highlighting ingredients and culinary traditions from Fukuoka and the wider Kyushu region.
Chef Yamanaka brings experience from Michelin-starred kitchens including Georges Blanc and L’Osier. His cooking combines Japanese techniques with classical French influences, with an emphasis on seasonal ingredients and seafood from Fukuoka’s coastal waters.
The programme begins on Friday evening with Feast from the Sea, a seafood dinner inspired by the coastal cuisine of Fukuoka. Among the highlights are two sauces created by Chef Yamanaka: Salted Kombu and Sake Sauce, which brings umami and salinity to seafood, and Teriyaki Glazed with Shiso Pistou, combining sweet and savory notes with the herbaceous character of shiso.
The dinner will also include a selection of Japanese-inspired dishes served as part of the buffet, with seafood taking a central role throughout the evening.
On Saturday and Sunday, Chef Yamanaka will introduce a series of à la minute dishes during brunch. The selection includes Charcoal Grilled Chicken Thigh with Black Japanese Seven Spice and Tartar Sauce, Pan-Seared Scallop with Salted Kombu and Sake Sauce, and Sautéed Foie Gras with Leek and Teriyaki Glaze.
Another highlight is Steamed Rice with Fish and Ginger, served with Ankake Yuba, mitsuba, and wasabi. The weekend brunch will also feature a gueridon service of Roast Beef Marinated in Shiokoji, served tableside with Red Miso Sesame Sauce.
The brunch will be complemented by a wider selection of Japanese dishes curated by Chef Yamanaka, extending the Fukuoka-inspired menu across the weekend.
Taste of Hakata Bay will take place at Bel Étage from September 18 to 20, offering a three-day programme centered on the seafood, seasonal ingredients, and culinary traditions of Fukuoka and Kyushu.
