Bel Étage at The St. Regis Jakarta will welcome Chef Freddie Salim, chef-owner of Silk Bistro, for a two-day dining collaboration on October 24 and 25. The special menu brings together a range of Asian flavors, highlighting Chef Freddie’s approach to contemporary cooking while complementing Bel Étage’s diverse dining experience.
Known for exploring influences from across Asia, Chef Freddie draws inspiration from the cultural exchanges that once took place along the historic Silk Road. His dishes often combine familiar regional flavors with modern techniques, creating menus that reflect both tradition and innovation.
During the collaboration, guests can enjoy a selection of Chef Freddie’s signature creations, including Foie Gras Pâté with fried Chinese doughnut, Scallop Tempura served with kombu butter and sweet corn purée, Red Curry Duck with lychee and Thai basil, and Black Pepper Truffle Noodle with mushroom chips and parmesan. Dessert comes in the form of Bitter Sweet, featuring hazelnut and dark chocolate mousse accompanied by chocolate chip cookies and cognac foam.
The experience extends beyond the main menu with a dedicated Silk Bistro station at Bel Étage. Dishes such as Gai Tod Hat Yai, Wagyu Beef Maranggi, Barramundi Nyonya Style, BBQ Short Ribs, and Tom Yum Soup offer a closer look at the restaurant’s interpretation of Asian cuisine, drawing from Thai, Indonesian, and Peranakan influences.
By bringing Silk Bistro into the Bel Étage dining experience, the collaboration offers an opportunity to explore a variety of Asian flavors through dishes shaped by different culinary traditions and contemporary techniques.
