Bel Étage is set to spotlight the culinary traditions of North Sulawesi with Torang Pe Rasa, a two-day dining collaboration featuring Chef Jovan Koraag, chef-founder of Jakarta’s Manado restaurant Mata Karanjang. Taking place on 18–19 July 2026, the event will showcase authentic Manado and Minahasan dishes, celebrating the region’s rich culinary heritage and distinctive flavours.
Born and raised in Manado, Chef Jovan has spent nearly two decades building his culinary career across Singapore and Indonesia. A graduate of SHATEC Singapore, he previously worked with international hospitality groups before serving as Head Chef for Jamie Oliver Restaurants in Indonesia. He now leads several restaurant concepts under the Solo Pizza Indonesia Group, including Mata Karanjang, which pays tribute to the cuisine and traditions of his hometown.
For the collaboration, Chef Jovan has curated a menu featuring some of North Sulawesi’s best-known regional dishes. Highlights include Brenebon Soup, the classic Manadonese red bean soup prepared with beef short ribs and aromatic spices; Ayam Kinetor, free-range chicken seasoned with Manado herbs and cooked in bamboo; and Tinorangsak, slow-cooked lamb shoulder served in the region’s signature spice-rich sauce.
The menu also includes other regional specialties such as Fish Roe Woku, Gohu, and Klappertaart, offering guests a broader introduction to the bold flavours and culinary traditions of Manado and Minahasa.
Through Torang Pe Rasa, Bel Étage continues its series of collaborations with Indonesian chefs, highlighting the country’s diverse regional cuisines while introducing diners to authentic local recipes and culinary traditions from across the archipelago.
