Bejana by Petty Elliott at The Ritz-Carlton, Bali will host a wine dinner with Sababay Winery on September 18, bringing together Indonesian cuisine and locally produced Balinese wine.
The dinner will feature a menu by Chef Petty Elliott, whose cooking at Bejana focuses on Indonesian ingredients, regional recipes, and traditional techniques presented through a contemporary approach. Sababay, meanwhile, will provide the wine pairings, highlighting its approach to producing wine in Bali’s tropical climate.
The evening begins with Hidangan Awal Nusantara, a selection of Indonesian-inspired starters including Sambal Teri Kacang, crispy cassava with garlic, quail eggs with sambal balado, and tempe bacem, paired with Sababay Ascaro.
The second course, Kuah Jukut Kelor, Bunga Kantang, features coconut, moringa leaves, turmeric, and torch ginger, paired with Sababay Reserve White. The main course includes Rendang Sapi Tok with klungah and fern shoots, fish sate lilit with smoky peanut sauce, soy-glazed chicken with sambal Johor and young rumpu rampe, and Opor Tahu with chayote, bamboo shoots, and turmeric leaves. The dishes are served with Sababay Reserve Red.
For dessert, the menu offers a Klepon Soufflé with pandan, grated coconut, coconut sugar, and coconut ice cream, paired with Sababay Moscato de Bali.
The collaboration brings together two locally rooted culinary approaches. Sababay was established in 2010 and works with grape growers in North Bali, producing what it describes as New Latitude Wines, made outside the world’s traditional wine-growing regions. Its wines are influenced by Bali’s tropical climate, soil, and local grape-growing community.
“This dinner is an opportunity to bring together two expressions of Indonesia in a way that feels authentic to Bejana,” said Raymond Siek, Director of Culinary at The Ritz-Carlton, Bali. “Our cuisine is deeply rooted in Indonesian ingredients and traditions, while Sababay brings its own Indonesian approach to winemaking.”
The Sababay Wine Dinner takes place on September 18, 2026, at Bejana by Petty Elliott. It is priced at IDR 1,300,000++ per person, including wine pairing.
