Rosewood Hong Kong will welcome a new cocktail bar this November through a collaboration with Lorenzo Antinori and Justin Shun Wah, co-founders of Bar Leone, which was named No.1 on The 50 Best Bars 2025 and 2026. Called Bar Camillo, the new bar is set to open on 25 November 2026.

The collaboration brings together the teams behind two hospitality names that currently hold the top positions in their respective global rankings. Rosewood Hong Kong was named No.1 in The 50 Best Hotels 2025 and 2026, while Bar Leone retained the No.1 spot in The 50 Best Bars for a second consecutive year.

Bar Camillo is designed around the idea of an Italian salotto, or living room, with a focus on cocktails, social gatherings and the rituals of Italian hospitality. Rather than following the more formal atmosphere traditionally associated with hotel bars, the concept aims to create a more relaxed setting while maintaining a focus on cocktail-making and service.

The project brings Antinori and Shun Wah together with several members of the Rosewood Hong Kong team, including Managing Director Hugo Montanari, Director of Culinary Operations Fabian Altabert, Hotel Manager Juan Serrano and Director of Food & Beverage Sandro Brusco.

“At Bar Camillo, we want to strip away the formality found in a traditional hotel bar. Building on my philosophy of what makes a great bar, Bar Camillo pairs the excitement and spontaneity of a gathering of close friends with fine-tuned, world class mixology and service,” Antinori says. “We want to offer a setting where guests can enjoy complex drinks without feeling stuffy, where the design and exceptional service prioritises something that is both vibrant and convivial.”

An Italian living room in Tsim Sha Tsui

The interior takes cues from the mid-century Italian living room, with glossy wood veneers, polished metal and mirrored walls set against gold, alpine green and cream tones.

A long banquette runs along the bar, while lower seating and enclosed corners offer a more intimate setting. The terrace extends the living room concept outdoors, with seating designed for guests to continue their evening with drinks overlooking the city.

The concept also has its own mascot, Camillo, a cheeky and slightly clumsy bartender character who becomes increasingly energetic as the night progresses. He represents the idea of padroni di casa, or hosts of the home, which Antinori sees as central to the bar’s approach to hospitality.

“Good bartenders are responsible for the guests’ entertainment, and we build the night to a crescendo through our warmth, our hospitality and the rituals that are part of the Bar Camillo experience,” he says.

Cocktails built around the Negroni

The beverage menu is divided into three sections. Aperitivi di Benvenuto features dry and refreshing drinks intended to start the evening, while Cocktail della Casa focuses on seasonal creations rooted in classic mixology. Playful Party Touches adds more playful and high-energy drinks to the menu.

The cocktail program will also draw on pop culture, with the menu changing four times a year according to a particular season and year. Each edition will incorporate cultural references into different parts of the experience, including Italian pop music, rotating wall art and the cocktails themselves.

Negroni is given a dedicated ritual. Guests will receive a small chit allowing them to choose their preferred spirit, garnish and flavor profile, with options ranging from floral to savory and rich. The drink will then be prepared tableside on a bespoke Negroni Trolley, where it is assembled and stirred according to the guest’s choices.

For Montanari, the project represents a collaboration between the Rosewood Hong Kong team and Antinori built around a shared approach to hospitality.

“Joining forces with Lorenzo to bring Bar Camillo to Rosewood Hong Kong is a celebration of shared vision and the incredible collective effort of our entire team,” Montanari says. “I am deeply grateful to our Hotel Manager, Juan Serrano; Director of Culinary Operations, Fabian Altabert; Director of Food & Beverage, Sandro Brusco, and every talent at Rosewood whose dedication made this collaboration possible.”

Antinori adds that Bar Camillo is intended to bring the atmosphere of a standalone cocktail bar into a hotel setting.

“Bar Camillo is bringing the energy and vibes of a standalone bar into The World’s Best Hotel,” he says. “Here, everything is deliberately relaxed yet celebratory while capturing the quality reminiscent of hanging out at the home of a close friend – just with the absolute best of service. The space itself is built to feel like a ‘cool house party’: eclectic and, most importantly, fun.”

Bar Camillo will open at Rosewood Hong Kong on 25 November 2026. The bar will have 50 seats across its indoor and outdoor spaces.

Opening hours are Tuesday to Thursday from 5pm to midnight, Friday and Saturday from 5pm to 1am, and Sunday from 5pm to midnight. The bar will be closed on Mondays.
