Less than a year after opening, Aulis Phuket by Simon Rogan bagged their first Michelin star from the Michelin Guide Thailand. Launched in December 2023, this restaurant in Phang Nga, Thailand, offers a chef’s table experience showcasing Chef Rogan’s passion for local ingredients and the surrounding area. The dining experience here allows you to fully immerse in philosophies that center on respect and reverence for seasonality and locality.
The team, led by chef Oli Marlow and head chef Charlie Wilson, focuses on using local flavors and ingredients. They’re all about working with farmers and growers from Thailand, along with stuff grown right on their own small farm. They embrace that farm-to-table vibe, with 95% of the ingredients on the tasting menu coming straight from local sources.
Aulis Phuket focuses on using local ingredients, reducing waste, and sticking to eco-friendly practices. The team partners with local farmers all over Thailand, like the organic farm run by Farmer Family in Paklok, to whip up amazing dishes highlighting the freshest native produce. And any scraps that can’t be used? They’re either composted nearby or repurposed to feed farm animals.

The first Aulis launched in 2016 in Cartmel, UK, as a nod to Aulis Lehtimaki, a Finnish chef and artist who played a significant role in the early days of Simon Rogan’s three Michelin star restaurant, L’Enclume. Since then, Simon and his crew have opened Aulis London, which got a Michelin star in the 2023–4 UK guide. They also kicked off Aulis Hong Kong in 2019, marking their first venture into Asia.
