SKAI Bar & Grill will collaborate with AMICI Bali for a one-night dining event, Taste of the Riviera, bringing together two culinary concepts inspired by the Mediterranean on 25 July 2026.
Held from 6pm to 10pm, the dinner will feature an endless-flow à la carte menu created by Chef Alessandro D’Amico, Head Chef of AMICI Bali, alongside Chef Samuel Barus, Chef de Cuisine of SKAI Bar & Grill. The collaboration centres on the shared dining traditions of Italy and the Mediterranean, with dishes designed to be enjoyed communally.
Chef Alessandro’s menu reflects the culinary philosophy established by Chef Enrico Bartolini, whose restaurants collectively hold 14 Michelin stars. At AMICI Bali, Chef Alessandro interprets classic Italian cuisine through a contemporary lens, while Chef Samuel complements the collaboration with SKAI’s signature wood-fire cooking techniques rooted in Mediterranean flavours.
Rather than following a conventional tasting menu, the evening encourages guests to share plates across the table, highlighting the convivial dining culture commonly associated with the Italian Riviera.
The menu will feature dishes including Wagyu Tajima Bresaola, Homemade Ravioli with Wagyu Tokusen Oxtail Ragout, and Prawn Umami, accompanied by seasonal sides such as Grilled Wild Mushroom and Smoked Leek. To conclude the meal, Chef Alessandro will present a selection of desserts inspired by classic Italian flavours, reinterpreted with a modern approach.
The culinary offering will be complemented by a menu of Italian-inspired cocktails and a curated selection of wines chosen to pair with the dishes throughout the evening.
Set at SKAI Bar & Grill’s beachfront venue in Legian, the event will also feature live DJ and saxophone performances, creating a relaxed atmosphere that reflects the leisurely dining culture of the Mediterranean. Through the collaboration, the two restaurants aim to showcase how shared plates, seasonal ingredients, and complementary cooking styles can come together in a single dining experience.
