With “A Journey of Impeccable Taste,” Chef Harley Wijaya from Alila Villas Uluwatu’s Indonesian restaurant, The Warung, will delight diners in Park Hyatt Jakarta in a four-day kitchen takeover. 

The Warung at Alila Villas Uluwatu is the home of authentic Indonesian and Balinese cuisine presented in the redefined style and made using fresh, seasonal, locally sourced ingredients. Here, guests can savor mouthwatering dishes while enjoying the uninterrupted expanse of the Indian Ocean for a memorable gastronomic experience. 

Chef Harley himself has been a fixture in the kitchens at Alila Villas Uluwatu since 2009 and, for the past decade, has served as Chef de Partie at the The Warung. He credits the passion he brings to his profession to cooking at home with his mother as a young boy, learning how to prepare authentic Balinese food for family and friends. His greatest joy is bringing the heart and soul of Balinese food to the plate to create special dining moments for guests. 

Swapping ocean views for the bright city lights, in this collaboration, Chef Harley will be the guest chef at Park Hyatt Jakarta’s Dining Room, where he will bring flavors from different regions across Bali together in a menu celebrating the traditional cuisine of the Island of the Gods. Jakarta’s gourmands can look forward to indulging in a selection of distinctive dishes that showcase the culinary diversity of Bali, all perfectly complemented by The Warung’s signature assorted Balinese sambals served in a congklak. 

Diners can whet their appetite with entrées such as Sate Lilit Ikan, charred herbed minced fish wrapped on a stalk of fragrant lemongrass, a delicacy of Jimbaran, South Bali. Mains include Iga Babi Bakar, a dish from Ubud of charred slow-braised pork ribs, and Bebek Betutu Bakar, grilled marinated duck in Balinese spices, representing the island’s western region. For a sweet finale, desserts include Es Puter, The Warung’s signature coconut ice cream with mung bean and jack fruit.
